The shiraz fruit was hand-picked in the early hours of the morning and processed with 50% as whole-cluster on the bottom of the fermenters, and the other 50% destemmed as whole berries on top. This gives the wine a crunchy cherry skin tannin laced with stalky spice and dark chocolate alongside a pure palate of bright red fruits.
Rich flavours of apricots and guava are balanced by spicy hints of cumin and white pepper. Tones of freshly tilled earth, dried wheat and sea spray are dotted with hints of gooseberry jam and jasmine, all sitting atop of a fine core of bristling texture and granitic length. A slightly smoky finish balanced with crisp stone fruit dried thyme.
A experimental blend of Chenin Blanc, Chardonnay, Sauvignon Blanc and Semillon. Gooseberry, nectarines and lemon curd, hints of brioche and toasted almonds. Pristine entry of green apple, stone fruit and subtle flavours of cut grass and honey suckle. A soft core of peach acidity and fine texture leads to a creamy finish of meringue and quince.
