2013 Clairault Cabernet Sauvignon Merlot
The Maritime climate of the Margaret River region makes grape growing a pleasure. The warm, dry summers and cool, wet winters allow vines to prosper in relatively low disease pressure conditions. The ideal scenario is for plentiful winter rains to leave the soils with good levels of stored moisture which can then be drawn on as required by the actively growing vines. This was the case in 2012, beginning with a wet winter and spring and followed by an Indian summer, characterised by sunny days and just the right amount of summer rain. The relatively dry end to the growing season combined with warmer than average temperatures in January set up for some spectacular ripening conditions. The early season warmth corresponded to early ripening of the whites and the early ripening of tannins in the reds, a very desirable character. The slightly cooler temperatures in March allowed gentle and complete ripening of the reds, making it a complete joy to be part of the Margaret River Wine Industry.
The Cabernet Sauvignon portion of the blend is de-stemmed and crushed, so that each berry is just split. This is to ensure minimal berry degradation during the fermentation process and to promote fresh, clean flavour production. Our Merlot is crushed as to fully expose the delicate flesh and promote a more refined and elegant textural development. Our ferments are cool and gentle, allowing slower, more controlled extraction of tannin and flavour. The wine is pumped over three times a day and then judiciously backed off as the wine develops. This wine was on skins in the fermenter for 14 days before gentle pressing and barreling down. The wine was aged in French oak for 10 months before the wine was balanced, clarified and bottled.
Fresh aromas of raspberries, rosewater and cedar with subtle hints of oak spice, black fruits and cherries. A vibrant wine with lifted cherry skin flavours on the entry leading to a bold palate driven by blackberry and mocha overtones and a focused dark chocolate and allspice finish.
